Potato Tastemaker Challenge 2009

Yeh, that’s right, I’m challenging potatoes.

OK, not really, in fact, I rather like them, hence my involvement in this project.

Along with a posse of bloggers who are far more domestically skilled, I’m partaking in a 3-month campaign to highlight the beauty of potatoes through a series of cooking videos, which will culminate in an iron chef style cook-off at BlissDom 2010 in February.

My first video highlights Cayenne Salmon, Potatoes Dauphinois, and my notoriously bad singing skills. But hey. I CAN’T be worse than Joey Ramone, right? RIGHT???

Cayenne Salmon
1 salmon steak or individual filets- I prefer wild, as then you don’t have the red dyes often fed farm raised salmon.

1 cup light brown sugar
Cayenne Pepper to taste
1.5 cups of orange juice.
Marinate salmon overnight. Place in baking dish, letting excess juice drain off. Pat with brown sugar and cayenne mixture, creating a nice coat. Bake for 22-25 minutes at 350. And you’re ready!

Potatoes Dauphinois (From the French Classic “I Know How To Cook…”, newly available in the Anglais.:)
Thinly sliced fingerling potatoes, up to a 1/4 inch of the top of a pie plate
5 pats of butter.
1 cup of Creme Fraiche.
Salt and pepper to taste- I prefer Celtic Sea Salt, myself.

Slice the potatoes- I use a ceramic mandoline from Williams Sonoma, $8. DON’T CUT YOUR FINGER OFF!!!!!
Salt and pepper, mix gently.
Add Creme Fraiche, mix gently.
Top with pats of butter, bake for 1.5 hours at 350. (I put in some time before the salmon, and coordinate so they’re done simultaneously.)
Serve with a salad or asparagus, and you’re in business. You’re the only one who knows it was supah-easy.:)
