Sunday Night Menu Plan & Song to kick it off

I’ve been inspired by My Joyful Haven to get off my bahookie and actually menu plan. (And by inspired, I mean I am entering her awesome giveaway for a Whole Foods gift card.) Or, as we enjoy calling it here, Whole Paycheck. We went there last night at 7:30 pm because my 4 year old convinced me there was not enough candy in our house.

She was right, there wasn’t. Little did I know I would wake up blearily at 8 am today with her chirping brightly, “Look, Mommy! I’m putting the candy from Whole Foods in your shoes!” Seriously. I thought I was dreaming. Luckily, she had the foresight to put the candy in plastic bags. I’m using the term “candy” very loosely- they were actually yogurt covered almonds, but whatever. They were in my shoes. She retrieved every pair I own from the closet and…well, you know. Filled them with almonds.

So I tend to be a fly by the seat of the pants menu planner, especially when Dan is on tour, and am really trying to get better about that. I don’t want my kids to feel like they have two households: the really organized one where they have two parents and the one where Daddy goes away for a month and Mommy lets everything fall apart. So this week is a fresh leaf of me trying to Fly.

Monday: New York Strip steaks w. brown sugar Montreal rub,  baked potatoes and greek yogurt, asparagus

Tuesday: Pierogies and apple sausage, salad

Wednesday: Teriyaki pork loin w. sweet potatoes, green beans

Thursday: Salmon with french fries for kids (gotta give them something to eat!) and arugala for me.

Friday: Pancakes, y’all.:)

Saturday: Spaghetti and turkey meatballs, salad

Sunday: Roast beef with mashed potatoes, roasted broccoli

Wow! I feel so much better already! If any of you have a favorite dinner that both you and your kids eat, please shout it out in the comments- my rotation is getting pretty familiar.

    Can we come over? :-) When I cook, it's usually in the crockpot. One dish that even my picky girl will eat: 6 chicken breasts 1 can of tomato soup or tomato sauce 1 packet of taco seasoning 1 packet of fajita seasoning Tortillas Fixin's (cheese, sour cream, salsa, peppers, lettuce, whatever you like) Put everything first 4 ingredients in crockpot, cook 6-8 hours. The chicken will be so tender that I can use a potato masher to "shred" the chicken. Put the mixture on a tortilla, add your favorite salsa, cheese, sour cream, peppers, roll and eat.     I love homemade chili, and find it incredibly easy to make in a hurry...and so easy to work with as far as what you'd already have stocked in your cabinets. Also, lemon pepper chicken breasts with just about any side works really well and is easy to make. And everyone in my house loves barbecue sandwiches...both storebought or home prepared meat; either way is good with us!

    I've been menu planning for probably the last 6 months and am here to tell you it has cut my grocery bill in half. I don't know why that is, but there you go. It's also keeping me sane. And it's also making me feel like somebody's mother. There are pros and cons.

    Man, I should have come over for dinner last night! We menu plan over here; have for years. I started it 'cause I was tired of the 4PM phone call that invariably went, "What do you feel like having?" "I don't know. What do YOU feel like having?" Now the call goes, "What do you feel like?" "I don't know. What's on the menu?" So he, who isn't near the menu, rattles off what's on it and we go from there. It's a small step, but I'll take it.     Your menu puts me to shame. I don't menu plan but I can tell you we eat the same stuff just about every week....meatloaf or burgers, turkey or pork loin, chicken baked or grilled on my trusty George Foreman (srsly love that thing), soup, pasta. How do you make roast beef anyway? Is that like pot roast? I'm def. going to try Tiffani's chicken in a crock pot recipe!
